When we first began talking about Backyard, and the food that we wanted to cook, fried chicken dinners were top at the top of that list. Nothing spells comfort like a warm chicken pot pie on a cool autumn evening, or a plate of fried chicken with all the fixins on a hot summer night. One of my favorite childhood memories with my grandmother was the 4th of July. She would always prepare her potato salad and finger lickin’ fried chicken. Though she has been gone now for many years, I still cannot celebrate a 4th of July without her potato salad, fried chicken and bbq.
The heart of every meal is love and amazing ingredients. The perfect size chicken, brine and breading make for an excellent piece of fried chicken. But there is one other key component that sets Backyard’s fried chicken apart from all the rest: Green Star Farm’s pasture raised chicken. Sonoma County is covered in fertile lush grasses, creating more than an ideal environment for raising chickens. Not only are these chickens raised in such an environment, but the ranchers at Green Star Farm’s are committed to raising the best chickens possible, and hands down, they raise the best chickens we have ever had, anywhere, period. They say this is because of their care for the soil, the grasses and moving the chickens daily so they are able to enjoy a wild forage feast of bugs.
The small details that they pay attention to, at Green Star Farm’s, helps to raise a happy, healthy, chicken while creating a thriving farm. We are fortunate to be able to solely serve Green Star Farm’s chicken at Backyard. Plus the added bonus, besides our wonderful friendship with Marc and Sarah, we get to see Heather every week when she drops off our chickens.
So with gratitude we thank everyone at Green Star Farm’s, and my grandmother’s memory, for making our delicious Thursday night Family Style Fried chicken memorable and our pot pies dream-worthy.
