Black Trumpets, Hedgehogs & Chanterelles......oh my!
As the rain begins to fall, the air fills with sea salt and pine, and a luring scent soon begins to wander in. All to familiar, a welcome return. We gather our baskets at dusk and head into the forest. The adventure begins.
Baskets brimming with wild bounties, we head into the kitchen, The wafting smell of maple, as we begin drying candy cap mushrooms. Duck stock begins to simmer, and with the added Matsutaki mushroom, what could be more divine. Chanterelles and hedgehogs sauteed gently with thyme, A rare treat of a lion's mane mushroom brought in to share. It is the season of the mushroom, and all that the rain has bared.
