Cooking Class: Handmade Pasta Series, Estruded Doughs & Dumplings

As in our first class we will begin the evening with the ideal ingredients and techniques used to create a basic but versatile pasta dough.  This second session will focus on using an extruder to create beautiful and unique pasta shapes.  In addition we will learn how to make and form gnocchi and learn which recipes can easily be made gluten free!   We will discuss how best to dry and store your hand made pasta and each student will go home with some to share with family and friends.

Don’t forget the sauce!  Chef Daniel will also share some of his favorite sauce recipes with us and we will prepare them as a class for an incredible meal to end the night.  For those planning to attend both of our pasta classes we will be sure to introduce new sauces for this second session.

As with all our evening classes, dinner and drinks are included in registration.

Come celebrate Valentine’s Day with your sweetheart at the Wind & Rye Kitchen.  We will be collectively cooking a three course meal that will be enjoyed with wine and cocktails at the end of the class.  While still highly educational, this class will also allow you time to talk with your partner and enjoy each other’s company. Lead by Chef Daniel Kedan of Backyard Restaurant, this class will feature a menu of locally sourced seasonal dishes.

Cooking Class: Handmade Pasta Series, Rolled & Filled Doughs

In this first class we will begin with the ideal ingredients and techniques used to create a basic but versatile pasta dough.  From there we will roll out and cut the dough into different shapes and sizes.  Next you will create tasty fillings and try your hand at a few stuffed pasta shapes.  We will discuss how best to dry and store your hand made pasta and each student will go home with some to share with family and friends.

Don’t forget the sauce!  Chef Daniel will also share some of his favorite sauce recipes with us and we will prepare them as a class for an incredible meal to end the night.

Cooking Class: Mastering Fried Chicken

This hands on class will cover everything you need to know to make the tastiest fried chicken right at home.   We will start with butchering the bird, move to brines and flour dredge seasoning and then test out the differences between table top fryers, cast iron, and stove top deep frying.   Don’t forget the sauce!  You’ll also learn how to easily create a variety of sauces to present with your fried chicken at the next big game or a week night family dinner.  This class will be a blast and typically sells out fast!

Drinks and Dinner will be served. (fried chicken obviously)

Celebrate the bounty of Northern California’s Rainy Season!

One of nature’s most versatile foods, mushrooms are a delicious way to add depth of flavor and nutritional value to any meal. Weather you are an experienced forager or a novice eager to learn the names of a few different species, this hands on class will provide you with recipes to incorporate mushrooms into appetizers, entrees and even desserts! Chef Daniel Kedan of Backyard Restaurant will be returning to the Wind & Rye Kitchen to teach this class. He will discuss the important roll fungi play in our local ecosystem, highlight varieties that can be found growing wild in Northern California and also provide resources for purchasing organic mushrooms cultivated right here in Sonoma County!

A delicious dinner and drinks will be provided!

Join Chef Daniel Kedan at Chef Laci Sandoval's teaching kitchen, Wind & Rye, in Penngrove for a Sophosticated Sauce Class October 3rd.

A well executed and flavorful sauce is often what separates a typical home cooked meal from a more memorable restaurant dish.  This hands on class will provide you with the recipes and skills to prepare more than six different sauces that will bring your plates to the next level.  Chef Daniel Kedan of Backyard Restaurant in Forestville will discuss what flavors and sauce consistencies will best enhance the main component of your dish. From poultry to beef, fish and even vegetarian entrees, Dan will show you simple ways to elevate your cooking.  Taste all the sauces in class and even leave with a few servings to use at your next meal.

Join Chef Daniel & Chef Laci Sandoval at Wind & Rye's teaching kitchen in Penngrove, for a wonderful evening all about ferments and pickles.

In this hands on class Chef Daniel will discuss the differences between vinegar based and fermented pickles as well as provide you with recipes, tools and tricks to make unique tasty pickles featuring the bounty of the Sonoma County fall harvest!  Using seasonal garden veggies, you will go step by step through the pickle and kraut making process and you will leave with at least five different ferments to share with family and friends.

Tilted Shed, Eye Cyder & Horse & Plow will be pouring, so come meet the makers of some of Sonoma County's finest ciders!  We will also have live music from guitarist David Jenkins.
